Here’s To A New Year

Happy (almost) New Year! Everything this last month has seemed very last minute for me with the holiday rush. If you’re feeling the same and in a pinch, here is a quick and easy last minute appetizer that I know will be the first to disappear at any party!

Zesty Saltines:

2 sleeves saltine crackers 

⅔ cup good olive oil, such as California Olive Ranch

1 packet ranch dressing seasoning 

1 tablespoon red pepper flakes 

  • Remove saltines from sleeves and place in a large mixing bowl.

  • In a glass measuring cup, add olive oil, ranch dressing seasoning and red pepper flakes. Mix well.

  • In stages, pour mixture over crackers, coating well. (I wear kitchen gloves and use my hands to gently rotate crackers in oil mixture.) And that’s it!

  • Serve with a side of pimento dip. (If time permits, make a day in advance to let oil soak in. Crackers will keep in an airtight for up to a week.)

Looking back to last holiday season, I joined Sarah Hider and the Life Concierge Podcast to do a special holiday vodcast. One topic that we covered was to pick a word to focus on for the upcoming year that could be integrated into your everyday life. While I will still continue to practice patience, gratitude, will be my word for 2023. I believe you can’t force your word to come about, it will just happen…again patience. I am thankful for everyone that has supported me and visited my site to see what I am slowly working to bring to life. In the new year I am excited to continue sharing recipes and tips to make any celebration perfect. As we begin what I call the 5th season, the time from New Years to Easter, I hope I can make yours extra special in this way.
